Hello Lovelies!
Its the 1st December which means we are ever closer to Christmas! That means putting my apron and whipping up some festive treats. I thought I would add something different to my usual cupcake recipe and thought apple and cinnamon were the perfect winter warmer!
Ingredients
2 cups self raising flour
1½ teaspoons baking powder
½ teaspoon salt
2 teaspoons ground cinnamon
2 cups diced apples
½ cup unsalted butter, room temperature
1 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
½ cup milk

Preheat oven to 200ยบ C. Grease muffin tins or fill with cupcake cases.

Sift together flour, baking powder, salt, and cinnamon in a medium bowl. Set aside.

Toss together diced apples and 2 teaspoons of flour to coat apples in a separate bowl. Set aside.

Cream together butter and sugar until lightened in colour, about 3 minutes. Add an egg, one at a time, taking care to fully incorporate before adding the other. Mix in vanilla.

Gently fold in flour mixture, alternating with milk. Stir until just combined.

Fold in diced apples and scoop mixture into prepared muffin tins, filling about ⅔ to ¾ full. Bake until a skewer inserted in the middle comes out clean, about 30 minutes.

When you take them out allow them to cool completely until decorating them. I chose to finish with a vanilla buttercream. Another option is to top with dark brown sugar, which is equally as delicious!
So there we have it. My festive apple and cinnamon cupcakes! With the with sweet bursts of apple and the spice of cinnamon, these are the perfect sweet comfort on the cold countdown to Christmas.
